We produce our mezcal using time-honored methods that reflect a deep respect for its artisanal roots. Working with a 12-ton oven and a traditional Chilean tahona for milling, we preserve the integrity of the agave and the soul of the craft.
As part of our commitment to sustainability and ethical practices, we plan to transition to a mechanical milling system in the near future. This evolution will improve efficiency and eliminate the use of animals while maintaining the quality and character that define what we make.

THE HARVEST
The leaves are removed and the

THE COOKING
The piñas are cooked to convert the
starches to sugar and to absorb

are fermented in vats to convert
sugars to alcohol . This creates wort
