UNITO MEZCAL is an artisanal spirit, slow-roasted in a conical stone oven, naturally fermented in pine wood tanks, and distilled in copper stills. The result is a smooth, fruity mezcal with subtle smokiness and refreshing citrus notes, offering a perfectly balanced flavor for any palate.
Our process

The Cultivation
Espadín agave is patiently grown for years under the Oaxacan sun until it reaches full maturity, ready to reveal the heart of mezcal.

The Harvest
The sharp leaves are removed, and the ripe piñas—the core of the plant—are unearthed by hand, carrying within them the soul of Unito.

The Cooking
The piñas are split and placed into conical stone ovens. Over several days, heat and earth transform their starches into sugars, infusing them with the subtle smokiness that defines our mezcal.

Milling
Once cooked, the agave is crushed with a handcrafted tahona, a circular stone wheel that slowly presses the fibers, releasing their sweet juices. The fibrous remains, known as bagazo, stay part of the process.

Fermentation
The agave juice, pulp, and pure water ferment naturally in open-air pine tanks. Over the course of days, this alchemy converts sugars into alcohol, giving birth to the base known as mosto.

Distillation
The mosto is distilled twice in copper stills, under the careful eye of our Maestro Mezcalero. What emerges is a mezcal that is smooth, fruity, lightly smoked, and bright with citric notes—the unmistakable essence of Unito
